Duck sauce with liquorice & cherries

Peel and finely chop the onions. Cut the cherries into halves and remove the stones.
Sweat the onions in one tablespoon of butter and mature. Make sure the onions don’t get burnt. Add the cherries, chicken stock, wine, jam and the chopped liquorice. Bring the mixture to a boil, then lower the heat and blend while letting it simmer. Season with pepper and 3 spoonful of butter.
Note! Add cornflour according to the instructions on the package if you prefer to have a thicker sauce.
